Last Wednesday we made Jollof rice which is an African dish of rice, vegtables, spice and tomatoes. Heres how we made it.
Recipe
4 cups of white rice Makes 6-8 servings
8 oz tomato sauce
3 oz tomato paste
1 diced onion
2 tsp salt
1 tsp dry red pepper (like cayenne pepper)
4 bouillon cubes (4 chicken stock cubes)
Water
Method
- Put the rice and about six cups of water into a pot and place on high heat.
- If preferred boil water first and then add rice to boiling water.
- Let the rice cook for 10~15 minutes.
- After the rice has cooked,add the tomato sauce,tomato paste and onion
- Add enough water to allow the rice to complete cooking
- Next add the bouillon cubes.
- Add the salt and dry red pepper.
